Venison with Juniper


1.5 lb Venison

3 TBSP lard or butter

1 shallot, minced

1 tsp ground Juniper

2 tsp Rosemary, chopped

1 TBSP garlic, minced

1 Cup Red Wine


Place the Venison in a bowl, pour red wine over and let marinate for 2 hours, flip pieces of Venison, let marinate for another 2 hours. Place butter, bacon fat, into skillet, melt together. Place garlic and shallot in skillet with Juniper and Rosemary. Add Vension, cook for 8 minutes, flip, cook for another 8 minutes.
