2 lbs Yukon Gold Potatoes, halved
2-3 TBSP olive oil
1- Rosemary Sprig, chopped (no stem)
Parmesan Cheese, shredded
Preheat oven to 425 degrees. Place halved potatoes, olive oil, salt, pepper, and chopped Rosemary into a bowl. Mix well until potatoes are completely covered with ingredients. Place contents of bowl into a baking dish, roast for 18-24 minutes until you start to see brown on the potatoes, and they have reached the desired tenderness. Pull from oven, sprinkle with Parmesan cheese, serve.
