Crab Cakes


1 Egg

3 TBSP Mayonnaise

4 tsp lemon juice

1/8 tsp Red Pepper Flakes

1 tsp dried tarragon

1 TBSP minced green onions

8 oz crab meat

1/2 cup crushed buttery round crackers

1 TBSP butter


In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and green onions. Gently stir in crab meat, being careful not to break up the meat.  Gradually mix in crackers, adding until desired consistency is achieved.  Heat butter in a skillet over medium heat.  Form crab mixture into 4 patties.  Place patties in skillet, and cook until golden brown, about 5-6 minutes on each side.
