2 beef filet steaks, wrapped (or wrapped yourself) with bacon
2 TBSP butter
Drizzle of Olive Oil
1 TBSP Gorgonzola Crumbled cheese
Preheat oven to 450*F. Using cast iron skillet, heat olive oil and butter until butter becomes melted. Add steaks and sear for 1 minute. Salt and pepper side facing you, while other side is searing. After 1 minute, flip filet and repeat with salt and pepper. After the final minute is up, place fillets and pan in oven. If steaks are 2″ thick, cook for 8 minutes for rare, 10 minutes for medium rare. Once timer is set, pull pan from oven, set on cold surface of stove. Add Gorgonzola to top of filet, let rest for 5 minutes before serving.
